Irish Whiskey is generally regarded as being generally smoother than Scottish counterparts, though this impression is based in part on the Jameson blend, the dominant product.
To be labelled as Irish whiskey it must be made from a mash of malted barley, plus other (optional) cereal grains. The spirit must be aged in oak barrels of 700 liters (185 US gallons) or less for a minimum of three years in the Republic of Ireland and/or Northern Ireland. The only additives allowed are water and caramel coloring, and the whiskey must be bottled at at leadt 40 percent abv (80 proof).
